How we make these products

We make our Cinnamon Roasted Pecans by starting with Texas-grown pecans that we slow-roast at 325°F until they develop a deep golden color and release their natural oils. While the pecans are still warm from roasting, we toss them in a mixture of cane sugar, Ceylon cinnamon, and a pinch of Texas Hill Country salt, allowing the coating to caramelize slightly on the hot nuts for a crispy-sweet shell that locks in the spice.

The key to our process is the double-roasting technique—first dry-roasting the raw pecans to bring out their buttery flavor, then a second quick roast after coating to set the cinnamon-sugar mixture without burning the spices. We use Ceylon cinnamon rather than the more common cassia variety because it provides a sweeter, more delicate warmth that complements rather than overpowers the pecan's natural nuttiness. Each batch is stirred by hand every few minutes during roasting to ensure even coating and prevent hot spots that could create bitter notes.

Our pecans come from a third-generation orchard in San Saba, Texas—the "Pecan Capital of the World"—where the sandy soil and Colorado River create ideal growing conditions for native varieties with exceptionally high oil content.
